Winter is here, again! And this time I am at a place where neither I can grow vegetables, nor can I prepare my favourite soup. So I thought why not write about it to revisit one of my most cherished recipes. I prefer this whenever either of us feel sick. Best for throat/chest infection, cough, cold, fever. I prepare this even when no one’s sick, I love this soup so much. Since I am a flag bearer of healthy eating, all the main ingredients come from my organic kitchen garden, prepared in pure ghee, which also comes from my kitchen. It’s tasty, it’s easy to make and soothes sore throat as much as the soul. Enjoyed best cooped up inside the blanket in single digit temperature, which I miss here in Kolkata.
- 10 fully ripe tomatoes
- 2 garlic bulbs
- Few green chillies
- A couple of tea spoons desi ghee
- 8-10 black peppers
- Fresh mint
- Basil leaves 8-10 each
Step 1: In a pressure cooker pour a bowl of water, add the tomatoes, one bulb of garlic, 5 green chillies, the fresh herbs, salt and 5 table spoons of sugar. Let the ingredients boil for upto 3 whistles, first one in high flame and the rest in low.
Step 2: Once that’s done, let the cooker rest for a few minutes. Let it cool completely, which generally takes 15mins. Either mash all the ingredients manually with a big spoon or use a grinder. It should come out as a smooth liquid with no major lumps from the tomatoes or the garlic. Now stain the liquid (the puree has to be smooth).
Step 3: Crush the black peppers coarsely.
Step 4: Finely chop 5-6 garlic cloves.
Step 5: Take a saucepan, heat it, add the ghee.
Step 6: Slightly fry the black pepper and garlic together for a couple of minutes. Add the tomato puree. Let it boil for 5 minutes. Keep stirring so that it doesn’t stick to the bottom. Add water according to the desired thickness, one cup will do.
Step 6: Serve hot with bread toast or without anything, I promise it going to calm your heart instantly.
